As you choose meats from our menu, keep in mind that we raise and finish our meats in the more moderate spring and fall seasons.  While we raise slightly more than our advance orders, we typically exhaust our inventory shortly after each cycle.  So order for more than just one week, or consider joining our Home Delivery Program.

Heritage Veal

We also call this red veal.  It is grown and finished the way my grandfather did it at Fair View Farm in South Louisiana 50 years ago.  These are young steers grown by their mother's side in the open pasture.  They dine on nothing more than mother's milk, clean native Texas grasses, fresh air and sunshine.  No drugs or hormones of course.  Because the calf yields significantly less total weight, these pieces are priced slightly higher than mature beef.
