Boiling an Egg, Best Practices

Cover with cold water, bring to a rolling boil, turn off heat, cover pan and leave in water exactly 10 minutes. Run cold water over eggs, shaking them in pan to crack shells. If you leave them in cold water for about 5 minutes, they will be easier to peel.  We are working on the 2nd edition of The Jolie Vue Simply Simple Cooking Book. While it is still a long ways off, we know we will include a much expanded section on what to do with eggs. As a starter, think about including a fried or boiled egg on your sandwiches or on top of your pizza.
