Stretching

I hope you read your JVF Cooking Book. It’s for novices at the oven and stovetop but also for the experienced. One of the things to be learned is how to stretch your meats so that you can get the most from them. Here’s one of my favorites. It’s quick and feeds 4 on a pound of ground beef or pork.

Buy a good Marinara sauce and spaghetti pasta at the grocery. Fry a pound of thawed ground pork or ground beef while you are boiling the spaghetti. Pour the sauce over the meat and let it blend on a low simmer for a few minutes. Drain the spaghetti and coat with olive oil and garlic powder. Combining meat sauce. Garnish with grated parmesan and parsley. Serve.

You can feed four people splendidly (and probably have leftovers) on a pound of meat. Four ounces per person. That’s the Jolie Vue way.
