I am sure you noticed that we tried cutting our primo steaks to ½ inch thicknesses and putting two rather one in a package, yielding the same weight as the thicker cut. The thinking was that 1 inch thick was too much for the average person and by cutting the thickness in half, each package would feed 2. But they seemed to lose flavor, I suppose because there wasn’t enough mass to reserve flavor in the steak rather than all going to gravy. So, we’re back to the thicker steaks.
Never be afraid to admit a mistake.
